With the holidays right around the corner and with 2 weeks’ vacation from work is a time I usually revert back to the old habits of not watching what I eat as I sit in front the TV, watch sports or just watch the kids play with their Christmas gifts. With all that basketball and football on I usually grab some beer, wings and chips then by the time I go back to work those jeans are a little tighter and the shirts are not as loose as they were before my Christmas break. This year though I’ve told my family that none of that is happening because those days will be used to get in a couple of workouts a day and I’m taking a much healthier approach with what I eat also. I was introduced to Old London Melba Snacks recently and how they’re a healthy alternative and I could create some healthy recipes in the process. I saw that they’re quick appetizers I can eat plenty of, while it’s something I don’t have to worry about how many carbs I’m consuming and I don’t have to worry about my calories intake.

-Main Ingredient: ChickenInstructions:-1 tsp. Buffalo-style hot sauce
-1 tsp. light sour cream or fat-free Greek yogurt
-1 oz. skinless chicken breast (cooked and finely chopped)
-3 Old London ® Classic Melba Toasts
-2 Tbsp. part-skim mozzarella cheese (shredded)
-1 Tbsp. scallions (chopped)Directions

In a small bowl, mix hot sauce with sour cream or Greek yogurt. Add chicken, and toss to coat. Place Melba Toasts on a microwave-safe plate. Evenly top with chicken mixture. Sprinkle with shredded cheese. Microwave for 20 seconds, or until cheese has just melted. Sprinkle with scallions and enjoy!
